Mushrooms with Cognac

Ingredients:
  • 1/3 teacup of extra virgin olive oil
  • 4 cloves of garlic, finely chopped
  • 800g mixed fresh mushrooms
  • 6 teaspoons cognac
  • 1/2 teacup of parsley, finely chopped
  • A pinch or two of ground nutmeg
  • Ground pepper and salt to taste

Instructions:
  1. Clean and trim the mushrooms, then slice them.
  2. Place the olive oil in a large frying pan and warm it gently over medium heat.
  3. Stir-fry the finely chopped garlic for about a minute until it releases its aroma into the oil. Be cautious not to brown the garlic to avoid bitterness.
  4. Add the sliced mushrooms to the pan, increase the heat, and stir to coat them with the oil. Allow them to cook undisturbed for 4 to 5 minutes over high heat.
  5. Pour in the cognac and wait for the alcohol to evaporate.
  6. Add the ground nutmeg, finely chopped parsley, salt, and pepper.
  7. Combine all the ingredients thoroughly and let the mixture simmer for an additional 2 minutes, allowing the flavours to meld.

I can't "do" nutmeg, but the rest of the recipe sounds really very tasty, even tho' I don't know the taste of cognac.

You know how brandy taste? I should had put brandy on the recipe :) .. most people add brandy. It is slightly different but still cognac is a type of brandy .

Yes :), I have tasted brandy & it was very pleasant.
 
Not a fan of mushrooms over here but thanks for sharing! :bouncy:

Now this remind me and it is It's funny how my son reacts when I cook them, he hates them. But sometimes I sneak them into sauces:vincent:
